I L.O.V.E fried rice. I mean small obsession kind of L.O.V.E. However, I usually try to only eat it 2-3 times a year as it is loaded with carbs, calories, and fat. I cannot even begin to tell you how excited I was when the newest food trend surfaced: cauliflower rice. This fiber-rich, low-carb alternative to rice has changed my world. I am now able to enjoy “fried rice” on a monthly basis without all the carbs and guilt.
