Chicken Cauliflower Fried Rice

I L.O.V.E fried rice.  I mean small obsession kind of L.O.V.E.  However, I usually try to only eat it 2-3 times a year as it is loaded with carbs, calories, and fat. I cannot even begin to tell you how excited I was when the newest food trend surfaced: cauliflower rice. This fiber-rich, low-carb alternative to rice has changed my world. I am now able to enjoy “fried rice” on a monthly basis without all the carbs and guilt.

I came across a great Cauliflower Fried Rice recipe from SkinnyTaste that I just cannot get enough of. You can find the direct recipe here.  The recipe is made entirely of vegetables so I add my own protein (chicken, beef, etc…).  Also, when I’m super busy or feeling lazy,  I buy the fresh OR frozen pre-made cauliflower rice from Trader Joe’s and it tastes just as amazing.  Without the added protein, this awesome “fried rice” comes in a puny 108 calories for a heaping 1 and 1/3 cups.  Woo hoo!  Please share your favorite healthy swap recipe for a common “unhealthy” dish below in the comments.
